Bo Innovation

Two-Michelin starred Bo Innovation is back! Central’s H-Code welcomes a revamped Bo Innovation, where Chef Alvin Leung presents his gastronomic creativity across an all new 10-course experience. Titled ‘The Masterpieces’, the menu is inspired by renowned works of art, merging traditional Chinese flavours with European influences. Fish Magic is a dish inspired by Paul Klee’s painting which nods to Cantonese-style steamed fish – but with a nose-to-tail approach. Citrus marinated halibut, ankimo, bombay duck, pine nuts, bottarga, Sichuan peppers, and trout roe are served atop gold-plated fish bones, bringing a grand finish to the complex dish.

Ta Vie x Maison Mumm RSRV Champagne

Chef Hideaki Sato of Ta Vie has teamed up with RSRV Champagne for a truly indulgent culinary experience. Given that RSRV has been Chef Hideaki’s favourite champagne since he visited Maison Mumm Cellars in France 15 years ago, the collaboration was a no-brainer. Standout dishes include the Hokkaido crab topped with sweet Japanese corn kernels in a heavenly cajun butter sauce, which is paired with the delicate RSRV Cuvée 4.5 offering sweet notes of stone fruits, vanilla and honey. A charcoal-grilled Bress pigeon is served with grilled Taiwan bamboo shoot (offering a slightly sweeter finish than its Japanese counterpart), and elevated with liver paste and shiitake duxelles, paired with Maison Mumm’s prized Cuvée Lalou 2008, which presents a measured balance between Pinot Noir & Chardonnay with nutty, pastry and yellow fruits aromas. Available 1-31 at HK$4,080 (+10% service charge) per person.
