Expectations were high when Sevva opened 16 years ago. Bonnae Gokson’s reputation as a tastemaker meant many were watching closely in avid anticipation. Would she be able to merge a trend-forward dining concept with hospitable flair?

It’s fair to say Sevva exceeded all expectations. Blending Hong Kong comfort foods with European fine dining, the establishment quickly captivated food-savvy diners and the fashion set alike. Through its authentic local flavours and prime location, Sevva quickly became a must-visit for overseas friends too. Boasting inventive cuisine, elevated design and thoughtful service, Sevva established itself as a landmark that has stood the test of time.

We asked Bonnae to share the most unforgettable event in the past 16 years. “Sixteen years is a really long time”, she reminisces. “I still remember that it took us nine months to start the preparatory work in 2007. At that time, the place was still in a mess, and we had to negotiate with the government for new building plans for the updated spatial design, which was a huge project. In fact, there are a lot of things that are hard to forget. We went through a lot of major setbacks such as COVID and so on, but still we were able to persevere to where we are today. I feel very blessed and I am so grateful!”

Navigating these major events is a testament to Sevva’s enduring charm and resilience. So how does Bonnae feel now that Sevva is at the end of its era, closing in just 2 month’s time? “I’m thankful for the smallest things. For example, when I come back to the restaurant and see a blue sky, white clouds and sunshine. What I am most saddened by is the loss of our team that has been with me for so many years. Our dishwasher has been working with me for 16 years. And the ‘Green Wall’ in the centre of the restaurant is something that we have put so much love and care into. These aren’t things that happen overnight.”

How does she describe her feelings towards the city, where everything all started? “Hong Kong is my favourite city, I grew up here and I have a lot of memories. I think Hong Kong is a very resilient city. No matter the challenges, people get things done. I’m confident better times lie ahead. And Hong Kong is still the safest place in the world.”

Sevva’s legacy endures not only as an iconic dining destination, but as a beacon of Bonnae’s passion, vision and care for community – the quintessential Hong Kong spirit. Its closure marks the end of an era, but an indelible chapter for this local powerhouse.

Bonnae leaves a message for Hong Kongers: “Together we stand, divided we fall! Let’s work as one to make Hong Kong better. It saddens me that some view the city negatively from hearsay instead of experiencing its incredible magic and resilience firsthand. As for me, I’ve simply got boundless energy – much like my 102-year-old friend who is still working! Idleness can breed depression, whereas I thrive off fresh challenges and stimulating exchanges, such as collaborating with young talent. Work gives me a sense of purpose and joy.”

“I wish for the health and well-being of all Hong Kong people – not just physical, but mental as well. As the motto of Sevva says, we should all “Savour the moment!” and live in the present. Nowadays, people aren’t truly living in the moment – they’re living through their phones instead. Connect and be energised by one another! Time flies by before you know it. Even in tough times, try to find just three things each day that bring you joy. Don’t dwell only on the negatives. A little optimism can go a long way. Unity overcomes all challenges – our strength lies in coming together.”
