Hong Kong’s food lovers are in for a treat this November as Conrad Hong Kong brings back the celebrated Blend Brothers from Zeeland, Netherlands, for an extraordinary dining experience.
From November 6 to 14, 2025, the innovative culinary duo will team up with Chef Gary of Brasserie on the Eighth to present a limited-time menu that masterfully blends the culinary traditions of the Netherlands and Hong Kong. This exclusive collaboration promises a multisensory journey that combines decor, music, art, food, and beverages, immersing guests in a feast for all the senses.
The Blend Brothers, Hendrik and Kamiel Buysse, are renowned for their unique approach to dining. Since founding their pop-up restaurant concept Blend in 2015, the brothers have captivated diners worldwide with their creative and bold style. Elder brother Hendrik, a culinary virtuoso trained in Michelin-starred restaurants in Zeeland, is known for his innovative recipes that incorporate the finest local ingredients. Meanwhile, younger brother Kamiel brings his expertise in mixology and DJ artistry to the table, creating a vibrant and immersive atmosphere with his signature cocktails and music.
Joining them for this special event is Chef Gary, the Specialty Restaurant Chef at Brasserie on the Eighth. With 27 years of experience in authentic European cuisine, Chef Gary is a master of his craft.
The exclusive dining menus feature seasonal local ingredients and reflect the culinary heritage of the Netherlands while embracing Hong Kong’s rich food culture. Guests can select either a four-course dinner priced at HK$880 or a five-course dinner priced at HK$1,080
The experience begins with two expertly crafted apéritifs to awaken the appetite. Among the menu highlights are Dutch Imperial oysters No. 5, prized for their smooth texture and briny flavour, served with pickled jalapeño and Huacatay paste. Another standout dish is the hamachi and scallop crudo, delicately dressed in jalapeño and yuzu sauce, which enhances the natural richness of the fish.
The menu also includes the classic Dutch beef croquette, a dish showcasing tender Holstein beef neck wrapped in a perfectly crispy coating. For the main course, diners can choose between the butterflied cut sea bass, known for its firm texture and delicate sweetness, or Belcrisp BBQ, a crispy roasted suckling pig with succulent, flavorful meat beneath its crackling skin. The meal concludes with the Pornstar Martini, a signature cocktail that provides a perfect sweet and tangy finish.
Guests can also enjoy Kamiel’s innovative bar snacks and cocktails at the Pacific Bar, adding another dimension to this culinary journey.
